Ingredients

  • – 2 pie crusts (homemade or store-bought)
  • – 1 pound (454 g) ground beef
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 yellow onion, chopped into 1/4-inch pieces
  • – 2 celery ribs, sliced thin, about ½ cup (120 g)
  • – 1/3 cup (40 g) flour
  • – 2 cups (480 ml) beef broth
  • – 1 cup (240 ml) milk
  • – 1 teaspoon (5 ml) Worcestershire sauce
  • – 1/2-1 teaspoon (8 ml) kosher salt, adjust to taste
  • – 1/2 teaspoon (3 ml) freshly ground black pepper, adjust to taste
  • – 12-16 ounces (340-454 g) frozen mixed peas and carrots, about 3 cups
  • – 1 egg, beaten


Instructions

  1. Set your oven to a temperature of 425°F. Lay one pie crust into a deep pie dish, poke it with a fork, and leave it aside. In a large, deep pan over medium-high heat, cook and break apart the ground beef. Once done, move the meat to a small bowl.
  2. Using the same skillet, heat the vegetable oil. Add the chopped onions and sliced celery and sauté until they become tender, roughly 3 minutes. Sprinkle flour over them. Gradually add beef broth, stirring continuously to blend. Let it cook for a minute or two until it becomes thick.
  3. Pour in the milk, Worcestershire sauce, salt, and pepper. Lower the heat and let it simmer on medium-low heat until it thickens, around 5 minutes. Taste and adjust salt and pepper if needed.
  4. Combine the cooked beef and frozen peas and carrots with the sauce. Stir until everything is evenly incorporated. Transfer this mixture into the pie crust that’s in the dish. Place the second pie crust on top. Press the edges together and trim any extra dough.
  5. Cut a few slits in the top to let steam escape during baking. If you wish, brush the crust with beaten egg for a glaze.
  6. Place in the oven and bake for 35-40 minutes, or until the filling is bubbling and the crust turns golden brown. (You can cover the edges with foil to stop them from getting too brown, if preferred.) Let it rest for 10 minutes before serving.
