Description

Ingredients

  • – 1 tsp olive oil (5 ml)
  • – 1 lb lean ground beef (450 g)
  • – 1 bell pepper
  • – 1 Jalapeño, diced
  • – 2 cloves garlic, minced
  • – 1 inch ginger, minced
  • – 1 can water chestnuts (510 g), drained and chopped
  • – 1/4 cup (60 ml) green onions, chopped, for garnish
  • – Bibb lettuce, or iceberg
  • – 1/4 cup (60 ml) peanuts, chopped, optional for garnish
  • – 1 cup (240 g) white rice, cooked, optional for serving
  • – 1/3 cup (80 ml) soy sauce, low sodium, or tamari
  • – 3 tbsp (45 g) brown sugar, or honey
  • – 1 tbsp (15 ml) hoisin sauce
  • – 2 tbsp (30 ml) rice vinegar
  • – 1 tbsp (15 ml) sesame oil
  • – 1/2 tsp (3 ml) red pepper flakes, optional
  • – 2 tsp cornstarch (10 ml)
  • – 2 tbsp (30 ml) water


Instructions

  1. If you choose to include rice, prepare it as directed on the package, which usually takes around 20 minutes.
  2. Warm a large pan over medium heat, drizzle with oil, and add the lean ground beef, spices, jalapeños, and bell peppers. Cook until browned for roughly 5 minutes. Stir in the garlic, ginger, and chopped water chestnuts, and continue cooking for an additional 3 minutes.
  3. As the mixture cooks, prepare the sauce by mixing together soy sauce, hoisin, sesame oil, rice vinegar, brown sugar, red pepper flakes, water, and cornstarch.
  4. Drizzle the sauce over the cooked beef mixture. Allow it to simmer and thicken for 1-2 minutes. Remove from heat and set aside.
  5. Assemble the lettuce wraps by using two lettuce leaves for extra stability. Lightly layer with cooked rice, add the beef mixture, and optionally top with chopped peanuts and green onions for garnish.

Notes

  • For a lighter option, omit the rice and serve the beef mixture in lettuce wraps.
  • Adjust spiciness by adding more or less jalapeños and red pepper flakes to taste.
  • Drain and chop water chestnuts for a satisfying crunch in the beef mixture.
