Description

A delightful bowl combining lean ground beef, roasted sweet potatoes, creamy avocado, and a drizzle of hot honey, perfect for weeknight dinners.


Ingredients

  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste
  • Optional: chopped cilantro, red pepper flakes, lime juice


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
  3. Roast for 40–45 minutes, stirring halfway for even cooking.
  4. Heat 1 tbsp olive oil in a skillet over medium heat.
  5. Sauté diced onion until soft, about 3–4 minutes.
  6. Add ground beef to the skillet, breaking apart and cooking for 6–8 minutes.
  7. Stir in taco seasoning, salt, and pepper, cooking until browned.
  8. Assemble bowls by layering roasted sweet potatoes at the bottom, followed by ground beef, avocado slices, and a scoop of cottage cheese.
  9. Drizzle hot honey generously over each bowl, adding optional garnishes if desired.
  10. Serve immediately and enjoy while warm.

Notes

For crispy sweet potatoes, cut them into evenly sized pieces. Adjust the hot honey drizzle based on your spice preference.
