Description

Delicious ground beef enchiladas that offer cozy flavors and create lasting memories around the table.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a non-stick baking dish.
  2. In a skillet over medium heat, brown the ground beef and diced onions until the onions turn translucent, about 5-7 minutes.
  3. Add the minced garlic, cumin, and chili powder to the skillet and sauté for another minute.
  4. Spoon the beef mixture onto each tortilla and roll them tightly, placing them seam-side down in the greased baking dish.
  5. Pour the enchilada sauce over the tortillas, covering them completely.
  6. Top with shredded cheese and bake uncovered for 20-25 minutes until bubbly and golden.
  7. Serve with sour cream and additional toppings as desired.

Notes

For added nutrition, consider incorporating bell peppers or black beans into the filling. Warm tortillas before filling to avoid cracking.
