Ingredients
- 1 lb lean ground beef
- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat your oven to 375°F (190°C) and grease a non-stick baking dish.
- In a skillet over medium heat, brown the ground beef and diced onions until the onions turn translucent, about 5-7 minutes.
- Add the minced garlic, cumin, and chili powder to the skillet and sauté for another minute.
- Spoon the beef mixture onto each tortilla and roll them tightly, placing them seam-side down in the greased baking dish.
- Pour the enchilada sauce over the tortillas, covering them completely.
- Top with shredded cheese and bake uncovered for 20-25 minutes until bubbly and golden.
- Serve with sour cream and additional toppings as desired.
