Description

Comforting Ground Beef Enchiladas filled with savory beef and melted cheese, perfect for any occasion.


Ingredients

  • 1 pound lean ground beef
  • 8 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 1 packet taco seasoning
  • 1 cup tomato sauce
  • Fresh cilantro for garnish


Instructions

  1. Sauté the diced onions in a large skillet over medium heat until translucent, about 3–4 minutes.
  2. Add the lean ground beef to the skillet and cook until it is nicely browned, breaking it up as it cooks.
  3. Stir in the taco seasoning and tomato sauce, allowing the mixture to simmer for about 5 minutes.
  4. Fill each corn tortilla with the beef mixture and a sprinkle of cheese. Roll them up tightly and place them seam-side down in a baking dish.
  5. Pour any remaining sauce over the rolled tortillas and top with the remaining cheese.
  6. Bake for about 20 minutes or until the enchiladas are bubbling and golden brown.
  7. Garnish with fresh cilantro before serving.
