Ingredients
- 1 pound lean ground beef
- 8 corn tortillas
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 1 packet taco seasoning
- 1 cup tomato sauce
- Fresh cilantro for garnish
Instructions
- Sauté the diced onions in a large skillet over medium heat until translucent, about 3–4 minutes.
- Add the lean ground beef to the skillet and cook until it is nicely browned, breaking it up as it cooks.
- Stir in the taco seasoning and tomato sauce, allowing the mixture to simmer for about 5 minutes.
- Fill each corn tortilla with the beef mixture and a sprinkle of cheese. Roll them up tightly and place them seam-side down in a baking dish.
- Pour any remaining sauce over the rolled tortillas and top with the remaining cheese.
- Bake for about 20 minutes or until the enchiladas are bubbling and golden brown.
- Garnish with fresh cilantro before serving.
