Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 2 large sweet potatoes
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon (5 ml) ground cumin (2 grams)
  • 1 teaspoon (5 ml) paprika (2 grams)
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons (30 ml) chopped fresh cilantro (30 milliliters)
  • 1 lime (optional for serving)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes.
  3. Place sweet potatoes on a baking sheet.
  4. Drizzle with olive oil and season with salt and black pepper.
  5. Toss to coat evenly.
  6. Roast sweet potatoes for 25-30 minutes, turning halfway through, until tender and golden brown.
  7. While sweet potatoes are roasting, chop the onion and mince the garlic.
  8. Heat a large skillet over medium heat.
  9. Add ground beef to the skillet and cook until browned, about 5-7 minutes.
  10. Drain excess fat from the skillet.
  11. Add chopped onion and minced garlic to the skillet with beef.
  12. Cook until onion is translucent, about 3-4 minutes.
  13. Stir in ground cumin, paprika, and season with salt and black pepper.
  14. Cook for an additional 2 minutes to blend flavors.
  15. Remove skillet from heat.
  16. Once sweet potatoes are done, combine them with the beef mixture in the skillet.
