Ingredients
- 1 pound (454 g) ground beef (450 grams)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried thyme
- 1 teaspoon (5 ml) dried basil
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 2 cup (480 ml) s cooked rice (370 grams)
- 1 cup (240 ml) shredded cheddar cheese (115 grams)
- 1 cup (240 ml) beef broth (240 milliliters)
- 2 tablespoon (30 ml) s olive oil (30 milliliters)
- 1 cup (240 ml) frozen mixed vegetables (150 grams)
- 1/2 cup (120 ml) chopped fresh parsley (30 grams)
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion to the skillet and sauté until soft.
- Stir in minced garlic and cook for 1 minute.
- Add ground beef to the skillet and brown it, breaking it apart as it cooks.
- Drain excess fat from the skillet.
- Stir in oregano, thyme, basil, salt, and black pepper.
- Add cooked rice to the skillet and mix well.
- Pour in beef broth and stir to combine.
- Add frozen mixed vegetables and cook for 3-4 minutes.
- Remove skillet from heat and stir in chopped parsley.
- Transfer the mixture to a greased baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
- Remove from oven and let the casserole cool for a few minutes before serving.
