Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) dried basil
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 2 cup (480 ml) s cooked rice (370 grams)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)
  • 1 cup (240 ml) beef broth (240 milliliters)
  • 2 tablespoon (30 ml) s olive oil (30 milliliters)
  • 1 cup (240 ml) frozen mixed vegetables (150 grams)
  • 1/2 cup (120 ml) chopped fresh parsley (30 grams)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion to the skillet and sauté until soft.
  4. Stir in minced garlic and cook for 1 minute.
  5. Add ground beef to the skillet and brown it, breaking it apart as it cooks.
  6. Drain excess fat from the skillet.
  7. Stir in oregano, thyme, basil, salt, and black pepper.
  8. Add cooked rice to the skillet and mix well.
  9. Pour in beef broth and stir to combine.
  10. Add frozen mixed vegetables and cook for 3-4 minutes.
  11. Remove skillet from heat and stir in chopped parsley.
  12. Transfer the mixture to a greased baking dish.
  13. Sprinkle shredded cheddar cheese evenly over the top.
  14. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
  15. Remove from oven and let the casserole cool for a few minutes before serving.
