Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 1 medium head of cauliflower, chopped (about 4 cups (960 ml) or 600 grams)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) ground cumin (2 grams)
  • 1 teaspoon (5 ml) paprika (2 grams)
  • 1/2 teaspoon (3 ml) chili powder (1 gram)
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup (60 ml) water or beef broth (60 milliliters)
  • 1/4 cup (60 ml) chopped fresh parsley (15 grams)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté until it becomes translucent.
  3. Stir in the minced garlic and cook for about 1 minute.
  4. Add the ground beef to the skillet, breaking it up with a spoon.
  5. Cook the beef until browned and no longer pink.
  6. Season the beef with ground cumin, paprika, chili powder, salt, and black pepper.
  7. Mix in the chopped cauliflower, stirring to combine with the beef.
  8. Pour the water or beef broth into the skillet.
  9. Cover the skillet and let it simmer until the cauliflower is tender, about 10 minutes.
  10. Remove the lid and stir occasionally to ensure even cooking.
  11. Sprinkle the chopped fresh parsley over the dish before serving.

Notes

  • For a healthier option, opt for lean ground beef or turkey instead of regular ground beef.
  • Enhance the dish’s spiciness by increasing chili powder or adding a pinch of cayenne pepper.
  • Customize the flavor with herbs like oregano, thyme, or red pepper flakes for a more personalized touch.
