Ingredients
- 3 zucchini (675 g)
- 3 tablespoons vegetable oil, softened (42 g)
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) chopped fresh parsley
- 1/2 cup freshly grated vegetarian-friendly cheese (50 g)
Instructions
- Heat up an outdoor grill to a medium-high temperature and lightly coat the grill grate with oil.
- Cut each zucchini in two across the middle, then divide each piece into 3 long slices, resulting in 6 slices for each zucchini.
- In a bowl, combine the vegetable oil, minced garlic, and chopped parsley, then evenly apply this blend to both sides of each zucchini slice. Add a layer of grated cheese to one side of each slice, and arrange them on the grill, cheese side up, positioning them crosswise to prevent them from slipping through the grill.
- Cook the zucchini on the grill until the cheese is melted, the slices are well-cooked, and grill marks appear, which should take around 8 minutes.
