Description

Learn how to make delicious Grilled Zucchini With Parmesan that will elevate your summer BBQ game. Easy recipe with a burst of flavor!

Ingredients

  • 3 zucchini (675 g)
  • 3 tablespoons vegetable oil, softened (42 g)
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) chopped fresh parsley
  • 1/2 cup freshly grated vegetarian-friendly cheese (50 g)

Instructions

  1. Heat up an outdoor grill to a medium-high temperature and lightly coat the grill grate with oil.
  2. Cut each zucchini in two across the middle, then divide each piece into 3 long slices, resulting in 6 slices for each zucchini.
  3. In a bowl, combine the vegetable oil, minced garlic, and chopped parsley, then evenly apply this blend to both sides of each zucchini slice. Add a layer of grated cheese to one side of each slice, and arrange them on the grill, cheese side up, positioning them crosswise to prevent them from slipping through the grill.
  4. Cook the zucchini on the grill until the cheese is melted, the slices are well-cooked, and grill marks appear, which should take around 8 minutes.

Notes

  • Try using a variety of vegetarian-friendly cheeses like cheddar or mozzarella for added flavor.
  • Ensure each zucchini slice is thoroughly coated with the oil, garlic, and parsley mixture for even seasoning.
  • Prevent zucchini slices from sticking by properly oiling the grill grate before cooking.
