Description

Discover how to make delicious Grilled Zucchini with Goat Cheese, Basil, and Honey. This easy recipe is perfect for a healthy and flavorful dish!


Ingredients

  • 5 medium zucchinis (about 900g)
  • 1 Tbsp olive oil or avocado oil (15 ml)
  • 1/3 cup crumbled cheese alternative (such as dairy-free feta) (40 g)
  • 2 Tbsp fresh basil, chopped (30 ml)
  • 5 Tbsp agave nectar (22.5 ml)
  • Salt + pepper, to taste


Instructions

  1. Trim the ends off the zucchinis and cut them lengthwise into slices about 1/2 inch thick. Lay the zucchini slices on a platter or cutting surface and generously sprinkle them with salt. Allow them to rest for 20 minutes so that the excess moisture can be drawn out. Use a fresh cloth or paper towel to pat them dry.
  2. Preheat your grill or a grill pan to medium-high heat. Lightly coat both sides of the zucchini slices with olive oil or avocado oil.
  3. Arrange the zucchini slices on the grill. Cook them for 10-15 minutes, turning them over at the halfway mark. The zucchini is ready when it becomes tender and grill marks are visible. Take care not to overcook them!
  4. Take the zucchini off the grill and place them on a big serving dish. Scatter crumbled goat cheese and freshly chopped basil on top. Pour honey over the zucchini and add salt and pepper to taste. Enjoy your meal!
