Description
A delicious and healthy Grilled Veggie & Mozzarella Sandwich, filled with vibrant grilled vegetables and creamy mozzarella, perfect for a summer meal.
Ingredients
- 4 ciabatta rolls, split
- 8 oz fresh mozzarella, sliced
- 1 medium zucchini, sliced lengthwise (½-inch)
- 1 red bell pepper, seeded and sliced into strips
- ½ red onion, sliced into thin rings
- 8 oz portobello mushrooms, stems removed and sliced
- 3 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
- ½ tsp sea salt
- ¼ tsp freshly ground black pepper
- 2 tbsp fresh basil leaves, torn
Instructions
- Wash and dry all vegetables. Slice zucchini, bell pepper, onion, and mushrooms. Place in a large bowl.
- Whisk together olive oil, balsamic vinegar, honey, garlic, sea salt, and black pepper in a small bowl. Toss half of this marinade with vegetables and let rest for 5 minutes while heating the grill.
- Preheat grill or grill pan to medium-high heat (around 400°F). Grill vegetables for 3-4 minutes per side until tender-crisp. Remove and set aside.
- Brush the cut sides of ciabatta rolls with the remaining marinade mixture and grill cut-side down for 1-2 minutes. Top with mozzarella slices and cover to melt for 30-45 seconds.
- Layer grilled vegetables over melted mozzarella, drizzle with glaze, and add basil. Close the sandwich, press gently, and grill for 1 minute to meld flavors.
- Allow to rest for a minute before serving. Enjoy with a side salad or your favorite accompaniment.

Experiment with different vegetables or cheeses for personalized variations. Add spreads like pesto for an extra flavor boost.
