A vibrant and flavorful side dish featuring grilled asparagus, zucchini, and squash, perfect for summer gatherings.
Ingredients
- 1 bunch of asparagus
- 2 medium zucchinis
- 2 medium yellow squashes
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of garlic powder (optional)
- Juice of 1 lemon (optional)
Instructions
- Rinse the asparagus, zucchini, and squash under cold water. Trim the asparagus by cutting off the tough ends.
- Slice the zucchinis and yellow squashes into thin rounds.
- Combine the asparagus, zucchini, and squash in a large bowl. Drizzle with olive oil and season with salt, pepper, and optional garlic powder. Toss to coat evenly.
- Preheat a grill or stovetop grill pan over medium-high heat.
- Grill the vegetables for 5-7 minutes, turning occasionally, until they are tender and charred.
- Remove from the grill and squeeze lemon juice over the top if desired.
- Serve warm as a side dish.
