Description

These grilled and glazed carrots are a delightful combination of sweet, smoky flavors, perfect for summer gatherings.


Ingredients

  • 1 pound carrots, sliced thick down the middle lengthwise
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/8 teaspoon salt
  • 1 tablespoon orange juice (optional)
  • 1/4 teaspoon cinnamon (optional)


Instructions

  1. Preheat your grill for direct and indirect cooking to 450 degrees Fahrenheit.
  2. Toss the carrots in a bowl with extra virgin olive oil until evenly coated.
  3. Place the carrots on the grill over direct heat, rotating them every few minutes to achieve a slight char on each side.
  4. If the carrots begin to burn, move them to indirect heat to finish cooking, about 12 to 15 minutes until fork-tender.
  5. Just before removing the carrots from the grill, glaze them with a mix of butter, brown sugar, honey, salt, and any optional orange juice or cinnamon. Let them cook for one more minute.
  6. Remove the carrots from the grill and glaze them once more before serving immediately.

Notes

Ensure even thickness when slicing the carrots for uniform cooking. Soaking the carrots in water for about 30 minutes before grilling can enhance tenderness.
