Description

A comforting Greek sheet pan chicken dish featuring juicy chicken thighs and vibrant mixed vegetables roasted to perfection.


Ingredients

  • 4 chicken thighs
  • 2 cups mixed vegetables (bell peppers, zucchini, red onion)
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken thighs, mixed vegetables, olive oil, oregano, garlic powder, salt, and pepper in a large bowl.
