Ingredients
- 4 chicken thighs
- 2 cups mixed vegetables (bell peppers, zucchini, red onion)

Instructions
- Preheat the oven to 400°F (200°C).
- Combine the chicken thighs, mixed vegetables, olive oil, oregano, garlic powder, salt, and pepper in a large bowl.
- Spread the chicken and vegetables evenly on a sheet pan.
- Roast in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are caramelized.
