Description

Learn how to make delicious Greek potatoes with whipped feta at home with this easy recipe. Perfect for a flavorful and satisfying meal!

Ingredients

  • – 2.2 lb (1 kg) Baking Potatoes, peeled & diced into large bite-sized pieces
  • – 4 cups (960 ml) (1 liter) Chicken Stock
  • – 2-3 Lemons, (2 for boiling, 1 is optional to serve)
  • – 1 Chicken Oxo Cube (sub 1 tsp (5 ml) Chicken Bouillon)
  • – 3 tbsp (45 ml) Olive Oil
  • – 2 tsp (10 ml) Dried Oregano
  • – 1/4 tsp (1 ml) EACH: Salt & Black Pepper
  • – 1 small bulb of Garlic, cloves left in skins and lightly smashed with the side of a knife
  • – 1 tbsp (15 ml) finely diced Fresh Parsley (see notes)
  • – 1x 7 oz (200g) block of Feta, roughly broken into large chunks
  • – 3.5 oz (100g) Cream Cheese
  • – 2 tbsp (30 ml) Olive Oil
  • – 1 tsp (5 ml) Honey

Instructions

  1. Place the diced potatoes in a large saucepan and add the chicken stock until they are nearly submerged.
  2. Juice two lemons into the pot, then crumble in the chicken Oxo cube.
  3. Stir everything together before turning up the heat to bring it to a boil.
  4. Cook the potatoes until they are almost tender when pierced with a knife.
  5. Strain the potatoes and let them air dry for about 10 minutes, or until they stop steaming and can be handled comfortably.
  6. It’s crucial to let the moisture evaporate so they become crispy in the oven.
  7. Set your oven to 390F/200C to preheat.
  8. Place the potatoes on a large baking sheet and coat them with olive oil, oregano, salt, pepper, and smashed garlic.
  9. Bake them for approximately 40-45 minutes, or until they are a deep golden brown and crispy, stirring occasionally.
  10. While they bake, combine the feta, cream cheese, olive oil, and honey in a food processor, blending until smooth and creamy.
  11. You may need to pause and scrape down the sides a couple of times.
  12. Spread the creamy mixture on the bottom of a large, shallow serving dish and layer the roasted potatoes on top.
  13. Finish with fresh parsley and, if desired, a squeeze of lemon juice before serving. Enjoy!

Notes

  • Use fresh oregano instead of dried for a more vibrant taste.
  • Opt for high-quality feta cheese for a rich, creamy topping.
  • For a smoother consistency, peel garlic cloves before smashing.
