Ingredients
- – 2.2 lb (1 kg) Baking Potatoes, peeled & diced into large bite-sized pieces
- – 4 cups (960 ml) (1 liter) Chicken Stock
- – 2-3 Lemons, (2 for boiling, 1 is optional to serve)
- – 1 Chicken Oxo Cube (sub 1 tsp (5 ml) Chicken Bouillon)
- – 3 tbsp (45 ml) Olive Oil
- – 2 tsp (10 ml) Dried Oregano
- – 1/4 tsp (1 ml) EACH: Salt & Black Pepper
- – 1 small bulb of Garlic, cloves left in skins and lightly smashed with the side of a knife
- – 1 tbsp (15 ml) finely diced Fresh Parsley (see notes)
- – 1x 7 oz (200g) block of Feta, roughly broken into large chunks
- – 3.5 oz (100g) Cream Cheese
- – 2 tbsp (30 ml) Olive Oil
- – 1 tsp (5 ml) Honey
Instructions
- Place the diced potatoes in a large saucepan and add the chicken stock until they are nearly submerged.
- Juice two lemons into the pot, then crumble in the chicken Oxo cube.
- Stir everything together before turning up the heat to bring it to a boil.
- Cook the potatoes until they are almost tender when pierced with a knife.
- Strain the potatoes and let them air dry for about 10 minutes, or until they stop steaming and can be handled comfortably.
- It’s crucial to let the moisture evaporate so they become crispy in the oven.
- Set your oven to 390F/200C to preheat.
- Place the potatoes on a large baking sheet and coat them with olive oil, oregano, salt, pepper, and smashed garlic.
- Bake them for approximately 40-45 minutes, or until they are a deep golden brown and crispy, stirring occasionally.
- While they bake, combine the feta, cream cheese, olive oil, and honey in a food processor, blending until smooth and creamy.
- You may need to pause and scrape down the sides a couple of times.
- Spread the creamy mixture on the bottom of a large, shallow serving dish and layer the roasted potatoes on top.
- Finish with fresh parsley and, if desired, a squeeze of lemon juice before serving. Enjoy!
