Description

Discover the secret to perfect Greek Lemon Chicken with this simple recipe. Learn the art of infusing chicken with zesty lemon flavor for a delicious Mediterranean meal.

Ingredients

  • 8 bone-in chicken thighs
  • 1/3 cup (80 ml) extra-virgin olive oil
  • 1/4 cup (60 ml) lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon (15 ml) dried oregano
  • 2 teaspoon (10 ml) s dried thyme
  • 2 teaspoon (10 ml) s Dijon mustard
  • 2 teaspoon (10 ml) s kosher salt
  • 1 teaspoon (5 ml) freshly ground black pepper

Instructions

  1. Create the marinade: In a small mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, kosher salt, and black pepper.
  2. Prepare the chicken: Place the chicken thighs in a large container, then pour the marinade over them, ensuring they are well-coated. Allow them to sit in the refrigerator for at least 1 to 2 hours, or up to 8 hours for more flavor.
  3. Set up for baking: Preheat your oven to 350°F (180°C). Arrange the marinated chicken in a baking dish and drizzle any leftover marinade over the top.
  4. Cook the chicken: Place in the oven and cook for 40 to 45 minutes until the chicken is thoroughly cooked, reaching an internal temperature of 175°F (80°C). You may choose to occasionally spoon the marinade over the chicken as it cooks. For added crispiness, switch on the broiler for the last 2 to 3 minutes. If desired, garnish with lemon slices for serving, especially if it’s for a special occasion.
