- 8 bone-in chicken thighs

- 2 teaspoon (10 ml) s dried thyme
- 2 teaspoon (10 ml) s Dijon mustard
- 2 teaspoon (10 ml) s kosher salt
- 1 teaspoon (5 ml) freshly ground black pepper
Instructions
- Create the marinade: In a small mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, kosher salt, and black pepper.
- Prepare the chicken: Place the chicken thighs in a large container, then pour the marinade over them, ensuring they are well-coated. Allow them to sit in the refrigerator for at least 1 to 2 hours, or up to 8 hours for more flavor.
- Set up for baking: Preheat your oven to 350°F (180°C). Arrange the marinated chicken in a baking dish and drizzle any leftover marinade over the top.
