Ingredients

  • 1 can chickpeas (15 oz) (425 g)
  • 2 tablespoons tahini (30 g)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/2 teaspoon (3 ml) ground cumin
  • Salt, to taste
  • 1/4 cup water (60 ml)
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved (150 g)
  • 1/2 cup black olives, pitted and halved (75 g)
  • 1/2 cup beef cheese, crumbled (75 g)
  • 1/4 cup red onion, thinly sliced (35 g)
  • 1/4 cup fresh parsley, chopped (15 g)
  • 1 teaspoon (5 ml) smoked paprika
  • 1 package pita bread
  • 1 tablespoon pine nuts, toasted (10 g)


Instructions

  1. Drain and rinse the chickpeas under cold water.
  2. In a food processor, combine chickpeas, tahini, olive oil, minced garlic, lemon juice, and ground cumin.
  3. Add salt to taste and blend until smooth.
  4. Gradually add water and continue blending until desired consistency is reached.
  5. Transfer the hummus to a serving platter.
  6. Arrange sliced cucumber, halved cherry tomatoes, pitted and halved Kalamata olives, crumbled feta cheese, and thinly sliced red onion around the hummus.
  7. Sprinkle fresh chopped parsley and smoked paprika over the hummus.
  8. Toast the pine nuts in a dry skillet over medium heat until golden, then sprinkle over the platter.
  9. Warm the pita bread as desired and cut into wedges.
  10. Serve the hummus platter with pita bread on the side.

Notes

  • For a smoother hummus, increase the amount of tahini or olive oil.
  • Adjust the lemon juice quantity to your taste preference.
