Description

Delightful cheesecake bars featuring a creamy filling with honey and pistachios, on a sweet graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup Greek yogurt
  • ½ cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup finely chopped pistachios
  • ¼ cup honey for drizzling
  • ¼ cup chopped pistachios for garnish


Instructions

  1. Create the crust: In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the ingredients blend together well.
  2. Press this mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes. Once done, remove the crust from the oven and let it cool.
  3. Prepare the filling: In a mixing bowl, beat the softened cream cheese until it becomes smooth. Incorporate Greek yogurt, honey, eggs, and vanilla extract into the cream cheese mixture. Beat until everything is well combined.
  4. Gently fold in the finely chopped pistachios, ensuring they distribute evenly throughout the filling.
  5. Pour the cheesecake mixture over the cooled crust, spreading it evenly across.
  6. Bake for 25-30 minutes or until the edges set and the center remains slightly jiggly. Once baked, let it cool to room temperature before refrigerating for at least 240 minutes.
  7. Before serving, drizzle with honey and garnish with chopped pistachios.

Notes

For a nuttier crust, add finely chopped pistachios to the crust mix. Serve chilled or at room temperature. They pair well with fresh fruits.
