Delightful cheesecake bars featuring a creamy filling with honey and pistachios, on a sweet graham cracker crust.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup Greek yogurt
- ½ cup honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup finely chopped pistachios
- ¼ cup honey for drizzling
- ¼ cup chopped pistachios for garnish
Instructions
- Create the crust: In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the ingredients blend together well.
- Press this mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes. Once done, remove the crust from the oven and let it cool.
- Prepare the filling: In a mixing bowl, beat the softened cream cheese until it becomes smooth. Incorporate Greek yogurt, honey, eggs, and vanilla extract into the cream cheese mixture. Beat until everything is well combined.
- Gently fold in the finely chopped pistachios, ensuring they distribute evenly throughout the filling.
- Pour the cheesecake mixture over the cooled crust, spreading it evenly across.
- Bake for 25-30 minutes or until the edges set and the center remains slightly jiggly. Once baked, let it cool to room temperature before refrigerating for at least 240 minutes.
- Before serving, drizzle with honey and garnish with chopped pistachios.
Notes
For a nuttier crust, add finely chopped pistachios to the crust mix. Serve chilled or at room temperature. They pair well with fresh fruits.
