Ingredients

  • 1/4 cup vegetable oil (60g)
  • 1 large onion, chopped
  • 6 potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups water (720ml)
  • 2 tablespoons (30 ml) vegetable bouillon powder
  • ground black pepper to taste
  • 3 tablespoons all-purpose flour (23g)
  • 3 cups plant-based milk (720ml)
  • 1 tablespoon (15 ml) dried parsley
  • 1/4 teaspoon (1 ml) dried thyme


Instructions

  1. Prepare all your ingredients.
  2. Warm the vegetable oil in a saucepan on medium heat. Add the chopped onion and stir it until it softens and becomes translucent, roughly 5 minutes.
  3. While the onions are cooking, place the diced potatoes, diced carrots, water, and vegetable bouillon powder in a separate pot and bring it to a boil. Let it cook until the vegetables are tender, around 10 minutes. Avoid overcooking. Season with ground black pepper according to your taste.
  4. Incorporate the flour into the softened onions to form a paste. Stir continuously for 2 minutes. Slowly pour in the plant-based milk, mixing thoroughly. Continue to cook on low heat, stirring constantly until it is heated through.
  5. Combine the potato and carrot mixture with the onion mixture. Mix in the dried parsley and thyme and heat everything together. Serve while hot.
