Ingredients
- 1/4 cup vegetable oil (60g)
- 1 large onion, chopped
- 6 potatoes, peeled and diced
- 2 carrots, diced
- 3 cups water (720ml)
- 2 tablespoons (30 ml) vegetable bouillon powder
- ground black pepper to taste
- 3 tablespoons all-purpose flour (23g)
- 3 cups plant-based milk (720ml)
- 1 tablespoon (15 ml) dried parsley
- 1/4 teaspoon (1 ml) dried thyme
Instructions
- Prepare all your ingredients.
- Warm the vegetable oil in a saucepan on medium heat. Add the chopped onion and stir it until it softens and becomes translucent, roughly 5 minutes.
- While the onions are cooking, place the diced potatoes, diced carrots, water, and vegetable bouillon powder in a separate pot and bring it to a boil. Let it cook until the vegetables are tender, around 10 minutes. Avoid overcooking. Season with ground black pepper according to your taste.
- Incorporate the flour into the softened onions to form a paste. Stir continuously for 2 minutes. Slowly pour in the plant-based milk, mixing thoroughly. Continue to cook on low heat, stirring constantly until it is heated through.
- Combine the potato and carrot mixture with the onion mixture. Mix in the dried parsley and thyme and heat everything together. Serve while hot.
