Description

A comforting grain free meatloaf that balances rich flavors of ground beef and spices, perfect for paleo or keto diets.


Ingredients

  • 2 lbs ground beef
  • 2 large eggs
  • 1 medium diced onion
  • 5 cloves minced garlic
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp nutmeg
  • 1 tsp real salt
  • Fresh ground pepper to taste
  • 4-6 oz tomato paste
  • 1 tbsp raw honey
  • Ketchup or sugar-free ketchup (optional)
  • 2 tbsp butter or avocado oil spray (for greasing)
  • Optional: 4-6 oz sharp cheddar cheese


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish with butter or avocado oil spray.
  2. Melt 2 tbsp of butter in a skillet over medium heat and sauté the diced onion and minced garlic until fragrant.
  3. In a large bowl, combine the ground beef, sautéed onion and garlic, eggs, spices, tomato paste, honey, and ketchup (if using cheese, mix it in as well).
  4. Form the mixture into a loaf shape and place it in the prepared baking dish.
  5. Bake for 50-60 minutes, or until cooked through and browned.
  6. Let it rest for 10 minutes before slicing.

Notes

Allow meatloaf to rest before slicing to retain juices. Optional ingredients can be adjusted based on preference.
