Description
A comforting grain free meatloaf that balances rich flavors of ground beef and spices, perfect for paleo or keto diets.
Ingredients
- 2 lbs ground beef
- 2 large eggs
- 1 medium diced onion
- 5 cloves minced garlic
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp paprika
- 1 tsp nutmeg
- 1 tsp real salt
- Fresh ground pepper to taste
- 4-6 oz tomato paste
- 1 tbsp raw honey
- Ketchup or sugar-free ketchup (optional)
- 2 tbsp butter or avocado oil spray (for greasing)
- Optional: 4-6 oz sharp cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking dish with butter or avocado oil spray.
- Melt 2 tbsp of butter in a skillet over medium heat and sauté the diced onion and minced garlic until fragrant.
- In a large bowl, combine the ground beef, sautéed onion and garlic, eggs, spices, tomato paste, honey, and ketchup (if using cheese, mix it in as well).
- Form the mixture into a loaf shape and place it in the prepared baking dish.
- Bake for 50-60 minutes, or until cooked through and browned.
- Let it rest for 10 minutes before slicing.
Notes
Allow meatloaf to rest before slicing to retain juices. Optional ingredients can be adjusted based on preference.
