Indulgent gourmet cosmic brownies topped with chocolate ganache and rainbow candy-coated chocolate chips, perfect for any celebration.
Ingredients
- ½ cup unsalted butter
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ½ cup Dutch-process cocoa powder
- ¼ tsp salt
- 1 tsp vanilla extract
- 2 large eggs (room temperature)
- ½ cup all-purpose flour
- 1 tbsp cornstarch
- ¼ cup heavy cream
- 4 oz semisweet chocolate (chopped)
- 2-3 tbsp rainbow candy-coated chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Melt the unsalted butter in a medium saucepan over low heat.
- Stir in the granulated sugar and brown sugar until smooth.
- Incorporate the Dutch-process cocoa powder and salt, mixing well.
- Remove from heat and whisk in vanilla extract.
- Add eggs one at a time, whisking well after each addition.
- Sift in the all-purpose flour and cornstarch, folding gently.
- Pour the batter into the prepared baking pan and bake for 20-25 minutes.
- Heat heavy cream until simmering, then pour over chopped chocolate and stir until smooth to make ganache.
- Pour ganache over cooled brownies and sprinkle rainbow chocolate chips on top.
- Chill in the refrigerator for at least 30 minutes, then cut into squares.
