Ingredients

  • 1 pound (454 g) mini sweet bell peppers (12 peppers)
  • 10 ounces (283 g) feta cheese
  • Balsamic glaze, to drizzle
  • Maple syrup, to drizzle
  • 2 tbsp (30 ml) fresh thyme (or dried, but fresh is prettier!)
  • Black pepper, to taste


Instructions

  1. Set your oven to 400°F to preheat.
  2. Rinse and pat dry the mini sweet bell peppers. Slice them in half lengthwise and remove any seeds and inner white parts.
  3. Fill each pepper half with feta cheese to your preference—whether you want them stuffed completely or with just a small amount of cheese.
  4. Arrange the stuffed peppers in a single layer on a baking sheet or dish. Bake them in the preheated oven for 20-25 minutes, until the peppers are slightly browned or charred and tender.
  5. Take the roasted peppers out of the oven and place them on a serving dish. Drizzle with balsamic glaze and maple syrup, then sprinkle with fresh thyme and a dash of black pepper. Serve them warm and enjoy!
