Description
A quick and easy gluten-free banana bread made with overripe bananas, cottage cheese, and chocolate chips for a delightful treat.
Ingredients
- 2 large overripe bananas
- 1 cup low-fat or full-fat cottage cheese
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1/4 cup creamy almond butter
- 1 ½ tsp vanilla extract
- 1 ½ cups oat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon (optional)
- 1/4 tsp sea salt
- 1/2 cup mini or regular chocolate chips
Instructions
- Preheat the oven to 350°F and line a loaf pan with parchment paper.
- Add the bananas, cottage cheese, eggs, maple syrup, almond butter, and vanilla extract to a high-speed blender. Blend until smooth and creamy.
- Add the oat flour, baking powder, baking soda, cinnamon, and sea salt. Blend again just until combined.
- Fold in the chocolate chips by hand using a spatula.
- Pour the batter into the loaf pan and smooth out the top. Add a few extra chocolate chips on top if desired.
- Bake for 45–48 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- Let cool completely in the pan before slicing for best texture.
Notes
For added flavor, try using different brands of almond butter and consider adding nuts or seeds.
