Ingredients

  • 1 tablespoon vegetable oil (15 ml)
  • 2 medium zucchinis, sliced (approximately 400 grams total)
  • 2 medium yellow squashes, sliced (approximately 400 grams total)
  • 3 cloves garlic, minced
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.6 grams)
  • 1/4 cup (60 ml) grated cheddar cheese (25 grams)
  • 1 tablespoon (15 ml) chopped fresh parsley (4 grams)


Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add the sliced zucchinis and yellow squashes to the skillet.
  3. Sauté the vegetables for 5-7 minutes, stirring occasionally.
  4. Add 3 cloves minced garlic to the skillet.
  5. Sprinkle 1/2 teaspoon salt and 1/4 teaspoon black pepper over the vegetables.
  6. Continue cooking for another 2-3 minutes, stirring frequently.
  7. Remove the skillet from heat and sprinkle 1/4 cup grated Parmesan cheese over the medley.
  8. Stir gently to combine the cheese with the vegetables.
  9. Sprinkle 1 tablespoon chopped fresh parsley over the dish.
