Ingredients
- 2 large sweet potatoes (500g)
- 3 large eggs, beaten
- 1 cup (240 ml) grated cheddar cheese
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) coarse ground pepper
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) dried parsley
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) paprika
- 1/4 teaspoon (1 ml) cayenne pepper
Instructions
- Set your oven to a temperature of 450° Fahrenheit to warm it up.
- Clean the sweet potatoes thoroughly and then cut them into quarters.
- Whisk the eggs in a medium-sized bowl, making sure it’s spacious enough for dipping the potato pieces later, and put it aside.
- In another bowl of similar size, combine the cheddar cheese, salt, coarse ground pepper, garlic powder, dried parsley, dried oregano, paprika, and cayenne pepper. Keep this mixture nearby.
- Submerge each sweet potato piece in the whisked eggs, then coat it in the cheese and spice mixture. Shake off any extra coating.
- Place the coated sweet potato wedges in a single layer on a baking sheet lined with foil.
- Cook in the oven for 20 minutes or until the coating turns a golden brown color. Take them out and enjoy.
