Ingredients

  • 2 large sweet potatoes (500g)
  • 3 large eggs, beaten
  • 1 cup (240 ml) grated cheddar cheese
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) coarse ground pepper
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) dried parsley
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) paprika
  • 1/4 teaspoon (1 ml) cayenne pepper


Instructions

  1. Set your oven to a temperature of 450° Fahrenheit to warm it up.
  2. Clean the sweet potatoes thoroughly and then cut them into quarters.
  3. Whisk the eggs in a medium-sized bowl, making sure it’s spacious enough for dipping the potato pieces later, and put it aside.
  4. In another bowl of similar size, combine the cheddar cheese, salt, coarse ground pepper, garlic powder, dried parsley, dried oregano, paprika, and cayenne pepper. Keep this mixture nearby.
