Ingredients

  • 1 medium to large Spaghetti Squash
  • 60 ml (4 tbsp) Olive Oil divided
  • 4 large cloves of Garlic minced (about 2 tbsp (30 ml))
  • 1/4 tsp (1 ml) Sea Salt
  • 1/4 tsp (1 ml) Black Pepper
  • 60 g (1/4 cup) Grated Parmesan (replace with halal-friendly cheese)
  • 60 g (1/4 cup) chopped Italian Parsley


Instructions

  1. Set your oven to 400°F to preheat.
  2. Rinse the Spaghetti Squash and slice it in half lengthwise.
  3. Remove the seeds from the center.
  4. Coat the interior of the Squash with 2 tablespoons of olive oil.
  5. Season with sea salt and black pepper.
  6. Arrange the Squash halves cut side down on a baking sheet lined with parchment paper.
  7. Roast for 30-35 minutes or until the flesh is easily pierced with a fork.
  8. Using a fork, detach the interior to form ‘spaghetti strands’.
  9. In a large skillet, heat 2 tablespoons of olive oil and add minced garlic.
  10. Cook over medium heat for 1-2 minutes until the garlic is tender and aromatic.
  11. Add the Spaghetti Squash strands to the skillet.
  12. Incorporate the cheese and parsley.
  13. Take off the heat and blend until everything is combined.
  14. Serve right away and enjoy your dish!
  15. Follow steps 2-5 as described above.
  16. Position the Squash halves cut side down in a microwave-safe dish.
  17. Pour in water to a depth of 1 inch to generate steam in the microwave.
  18. Microwave on high for 15 minutes.
  19. If not tender enough, heat for an additional 5 minutes or until the center is soft.
  20. Cautiously remove from the microwave and let it cool slightly.
  21. Use a fork to make spaghetti-like strands.
  22. In a large skillet, heat 2 tablespoons of olive oil and add minced garlic.

  24. Add the Spaghetti Squash strands to the skillet.
