Ingredients

  • 2 medium spaghetti squashes
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (5 g)
  • 1 teaspoon black pepper (5 g)
  • 1 tablespoon minced garlic (15 g)
  • 1 cup grated Parmesan cheese (100 g)
  • 1 cup shredded mozzarella cheese (100 g)
  • 1 teaspoon dried Italian seasoning (2 g)
  • 2 tablespoons chopped fresh parsley (8 g)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squashes in half lengthwise and scoop out the seeds.
  3. Brush the inside of each squash half with olive oil.
  4. Season each half with salt and black pepper.
  5. Place the squash halves cut-side down on a baking sheet.
  6. Bake in the preheated oven for 35-40 minutes until tender.
  7. Remove the squash from the oven and let it cool slightly.
  8. Use a fork to scrape the squash flesh into strands, keeping it in the shell.
  9. In a skillet, heat the remaining olive oil over medium heat.
  10. Add minced garlic and sauté for about 1 minute until fragrant.
  11. Stir in the Parmesan cheese, mozzarella cheese, and Italian seasoning.
  12. Mix until the cheeses are melted and well combined.
  13. Divide the cheese mixture evenly among the squash halves.
  14. Stir to combine the squash strands with the cheese mixture.
  15. Return the stuffed squash halves to the oven.
  16. Bake for an additional 10 minutes until the cheese is bubbly and golden.
  17. Remove from the oven and sprinkle with chopped fresh parsley.
  18. Serve hot and enjoy.
