Ingredients
- 2 medium spaghetti squashes
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon salt (5 g)
- 1 teaspoon black pepper (5 g)
- 1 tablespoon minced garlic (15 g)
- 1 cup grated Parmesan cheese (100 g)
- 1 cup shredded mozzarella cheese (100 g)
- 1 teaspoon dried Italian seasoning (2 g)
- 2 tablespoons chopped fresh parsley (8 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squashes in half lengthwise and scoop out the seeds.
- Brush the inside of each squash half with olive oil.
- Season each half with salt and black pepper.
- Place the squash halves cut-side down on a baking sheet.
- Bake in the preheated oven for 35-40 minutes until tender.
- Remove the squash from the oven and let it cool slightly.
- Use a fork to scrape the squash flesh into strands, keeping it in the shell.
- In a skillet, heat the remaining olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the Parmesan cheese, mozzarella cheese, and Italian seasoning.
- Mix until the cheeses are melted and well combined.
- Divide the cheese mixture evenly among the squash halves.
- Stir to combine the squash strands with the cheese mixture.
- Return the stuffed squash halves to the oven.
- Bake for an additional 10 minutes until the cheese is bubbly and golden.
- Remove from the oven and sprinkle with chopped fresh parsley.
- Serve hot and enjoy.
