Ingredients

  • 2 lb (907 g) s ground chicken
  • 1/2 yellow onion diced (about 1/2 cup (120 ml) diced)
  • 8-10 garlic cloves pressed
  • 3/4 cup (180 ml) bread crumbs* or 2 slices of dense bread, crumbled
  • 1 egg
  • 3 Tbsp (45 ml) fresh minced parsley
  • 3 oz (85 g) fresh grated Parmesan cheese
  • Salt to taste
  • Fresh cracked black pepper to taste
  • Optional : extra fresh grated Parmesan cheese to top
  • 2 Tbsp (30 ml) olive oil
  • 3 garlic cloves
  • 1 Tbsp (15 ml) all purpose flour*
  • 1 1/2 cup (360 ml) s heavy whipping cream
  • 3 oz (85 g) fresh grated Parmesan cheese
  • 1 Tbsp (15 ml) minced fresh parsley
  • Salt


Instructions

  1. Meatloaves:
  2. Set your oven to 375°F and lightly coat a muffin pan with oil or spray.
  3. In a large bowl, thoroughly blend the ground chicken with the chopped yellow onion, crushed garlic, bread crumbs, egg, parsley, grated Parmesan, salt, and pepper until they are well mixed.
  4. Use a scooper to portion out the chicken mixture evenly, forming them into balls, and gently press each into a muffin tin slot. Optionally, sprinkle extra Parmesan on top.
  5. Place in the oven and cook for 22-25 minutes, or until the juices are clear and the internal temperature hits 165°F.
  6. For the sauce, warm up a saucepan on medium heat and add oil with crushed garlic. Cook the garlic in the oil until you can smell its aroma, then stir in the flour until combined.
  7. Turn the heat down to medium-low and gradually pour in the heavy cream while whisking steadily until the mixture is smooth and warmed through.
  8. When the cream mixture is hot but not boiling, mix in the grated Parmesan and salt, continuing to stir until the cheese is fully melted and smooth.
  9. Add in the parsley, then remove from heat.
  10. Drizzle the creamy sauce over each small meatloaf when serving.

Notes

  • For a healthier option, use whole wheat bread crumbs or whole grain bread for added fiber.
  • Try adding crushed red pepper flakes or paprika to the chicken mixture for extra flavor.
  • Finely chop the parsley to evenly distribute its flavor throughout the meatloaves.
