Ingredients

  • 4 lb (1.8 kg) turkey breast
  • 4 tbsp (60 ml) unsalted butter
  • 1 lb (450 g) fresh green beans
  • 2 zucchini
  • 6 cloves garlic
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 ml) dried oregano
  • 1 tbsp (15 ml) dried thyme
  • 1 tsp (5 ml) salt
  • 1/2 tsp (3 ml) black pepper


Instructions

  1. Set the oven to 375°F. Clean the turkey breast under running water and dry it thoroughly with paper towels. Put it in a roasting dish and coat it evenly with oregano, thyme, salt, and pepper.
  2. Insert the turkey breast into the heated oven and cook for 1 to 1.5 hours, or until it reaches an internal temperature of 165°F. Let the turkey sit for 10 minutes before cutting it into slices.
  3. While the turkey cooks, cut the ends off the green beans and turn the zucchini into thin strips using a spiralizer or julienne peeler. Chop the garlic finely.
  4. In a large pan, melt the butter over medium heat. Toss in the minced garlic and cook for 1 minute until it releases its aroma. Add the green beans and zucchini strips, cooking for 5-7 minutes and stirring often until they are soft. Add salt and pepper as desired.
  5. Carve the turkey breast and serve it alongside the sautéed green beans and zucchini strips with garlic butter. Enjoy your meal!
