- 1 tablespoon fresh thyme (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1 teaspoon salt

Instructions
- Preheat the oven to 425°F (220°C).
- Combine baby potatoes and mixed vegetables in a large bowl.
- Drizzle with olive oil and add minced garlic, herbs, salt, and pepper. Toss to coat evenly.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes or until the potatoes are golden and crispy, stirring halfway through.
- Remove from the oven and serve warm.
