Ingredients

  • Beef, 4 cloves, minced
  • Dried thyme, 1 teaspoon (5 ml) (1 gram)
  • Dried rosemary, 1 teaspoon (5 ml) (1 gram)
  • Salt, 1 teaspoon (5 ml) (6 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (1 gram)
  • Greek yogurt, 1 cup (240 ml) (240 milliliters)
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Fresh parsley, chopped, 2 tablespoons (30 ml) (8 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and trim the carrots, then cut them into uniform sticks.
  3. In a large bowl, combine the carrots with olive oil.
  4. Add minced garlic, dried thyme, dried rosemary, salt, and black pepper to the carrots.
  5. Toss the carrots until evenly coated with the oil and seasonings.
  6. Spread the carrots in a single layer on a baking sheet.
  7. Roast the carrots in the oven for 25-30 minutes, or until tender and slightly caramelized.
  8. While the carrots roast, prepare the yogurt sauce.
  9. In a small bowl, mix the Greek yogurt with lemon juice.
  10. Stir in chopped fresh parsley and mix well.
