Description

Delightful garlic butter zucchini skewers that perfectly capture the essence of summer grilling with rich flavors and easy preparation.

Ingredients

  • 2 medium zucchinis
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Wash the zucchinis and cut them into thick slices or half-moons.
  3. Melt the unsalted butter in a small saucepan over low heat and add the minced garlic, stirring for about three minutes.
  4. Season zucchini pieces with salt and pepper.
  5. Thread the zucchini onto the skewers, packing them in securely.
  6. Brush the garlic butter over each skewer.
  7. Preheat the grill to medium heat and place the skewers on it.
  8. Cook for about 8-10 minutes, turning occasionally, until zucchini is tender and lightly charred.

Notes

For added flavor, consider adding fresh herbs like thyme or rosemary before grilling. Pair with grilled meats or serve as a vegetarian main with grains.
