Ingredients
- 1/2 cup melted and cooled butter
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 2 room temperature eggs
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- 2 teaspoons vanilla extract
- 1 teaspoon lemon extract
- 1 cup all-purpose flour (sifted)
- 1/4 teaspoon salt
- 1 cup powdered sugar (for glaze)
- 2 tablespoons lemon juice (for glaze)
- 1 tablespoon lemon zest (optional, for glaze)
Instructions
- Preheat your oven to 350F and line an 8×8 inch baking pan with parchment paper.
- Whisk the cooled melted butter, granulated sugar, and powdered sugar together until smooth.
- Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, mixing to combine.
- Fold in the sifted flour and salt until no flour streaks remain.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 16-17 minutes; they may not appear golden brown but will firm as they cool.
- Allow to cool completely before adding the glaze.
Notes
For a tangy glaze, mix powdered sugar with lemon juice. Cut into squares for serving.
