Description

These fudgy lemon blondies combine buttery richness with zesty lemon flavor, making every bite a perfect blend of sweet and tart.


Ingredients

  • 1/2 cup melted and cooled butter
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 room temperature eggs
  • 2 tablespoons lemon zest
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon extract
  • 1 cup all-purpose flour (sifted)
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)
  • 1 tablespoon lemon zest (optional, for glaze)


Instructions

  1. Preheat your oven to 350F and line an 8×8 inch baking pan with parchment paper.
  2. Whisk the cooled melted butter, granulated sugar, and powdered sugar together until smooth.
  3. Add in the eggs, lemon zest, lemon juice, vanilla extract, and lemon extract, mixing to combine.
  4. Fold in the sifted flour and salt until no flour streaks remain.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 16-17 minutes; they may not appear golden brown but will firm as they cool.
  7. Allow to cool completely before adding the glaze.

Notes

For a tangy glaze, mix powdered sugar with lemon juice. Cut into squares for serving.
