Ingredients
- 1 and 1/2 cups (188 g) all-purpose flour (spooned & leveled)
- 1 and 1/2 teaspoon (3 ml) s cornstarch
- 1 teaspoon (5 ml) baking powder
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
- 3/4 cup (150 g) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon (5 ml) pure vanilla extract
- 8 ounce s (226 g) full-fat brick cream cheese, softened to room temperature
- 3 Tablespoon s (43 g) unsalted butter, softened to room temperature
- 1 and 1/4 cups (150 g) confectioners’ sugar
- 1 teaspoon (5 ml) pure vanilla extract
- 3 cups (about 400g) assorted sliced fresh fruit
Instructions
- Prepare the base: Combine the flour, cornstarch, baking powder, and salt in a medium-sized bowl by whisking them together.
- In a separate large bowl, use an electric mixer to blend the softened butter and granulated sugar at medium-high speed until the mixture is smooth and creamy, which will take about two minutes. Incorporate the egg and vanilla extract into the mixture, ensuring to scrape the sides and bottom of the bowl as necessary. Gradually add the dry mixture to the wet mixture, mixing at a low speed until they are fully combined. Once the dough is well mixed, cover it securely and refrigerate for at least 20 minutes and up to a day. If chilled for more than a couple of hours, allow it to sit at room temperature for 20-30 minutes before using, as it will be quite firm and challenging to spread onto the pan.
- Set your oven to heat at 350°F (177°C). Lightly coat a 12-inch pizza pan with nonstick spray, even if the pan has a nonstick surface. Take the chilled dough from the fridge and press it into the pizza pan, forming a 9–10-inch circle about 1/3-inch thick. Bake for about 17–19 minutes until you notice the edges have a light golden color. Be careful not to over-bake. Let the crust cool completely before moving on to decorating.
- Prepare the topping: In a medium-sized bowl, use a handheld or stand mixer to blend the cream cheese and butter at medium speed until they reach a smooth consistency, approximately two minutes. Add the confectioners’ sugar and vanilla extract, mixing for another minute until everything is well combined and creamy. This will yield about 1 and 1/2 cups of frosting. Spread a generous layer of this frosting over the cooled crust. Arrange the sliced fresh fruit on top as desired.
- Slice the dessert into portions and serve. It can be stored in the refrigerator for up to three days.
