Description

Delightful frozen treats combining Greek yogurt and peanut butter for a refreshing snack.


Ingredients

  • 2 cups plain Greek yogurt (full fat or 2%)
  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (plus extra for topping if desired)
  • A pinch of salt (optional)


Instructions

  1. Combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract in a medium bowl. Stir until the mixture is smooth and well combined.
  2. Fold in the mini chocolate chips and a pinch of salt if using, ensuring they are evenly distributed.
  3. Line a baking sheet with parchment paper. Use a tablespoon or small cookie scoop to drop mounds of the mixture onto the sheet, leaving a little space between each bite. Sprinkle extra chocolate chips on top for an added treat.
  4. Place the baking sheet in the freezer for at least 120 minutes or until the bites are completely firm.
  5. Transfer the bites to an airtight container or freezer bag and store in the freezer for up to 30 days.

Notes

For added flavor, consider blending in chopped nuts or a pinch of cinnamon. Customization options include using flavored Greek yogurt or adjusting sweetness with more or less honey/maple syrup.
