Delightful frozen treats combining Greek yogurt and peanut butter for a refreshing snack.
Ingredients
- 2 cups plain Greek yogurt (full fat or 2%)
- 1/4 cup creamy peanut butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (plus extra for topping if desired)
- A pinch of salt (optional)
Instructions
- Combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract in a medium bowl. Stir until the mixture is smooth and well combined.
- Fold in the mini chocolate chips and a pinch of salt if using, ensuring they are evenly distributed.
- Line a baking sheet with parchment paper. Use a tablespoon or small cookie scoop to drop mounds of the mixture onto the sheet, leaving a little space between each bite. Sprinkle extra chocolate chips on top for an added treat.
- Place the baking sheet in the freezer for at least 120 minutes or until the bites are completely firm.
- Transfer the bites to an airtight container or freezer bag and store in the freezer for up to 30 days.
Notes
For added flavor, consider blending in chopped nuts or a pinch of cinnamon. Customization options include using flavored Greek yogurt or adjusting sweetness with more or less honey/maple syrup.
