Ingredients
- 1 cup (240 ml) all-purpose flour (120 grams)
- 2 large eggs
- 1 cup (240 ml) breadcrumbs (100 grams)
- 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 2 medium zucchinis
- Vegetable oil for frying
- 1 cup (240 ml) ranch dressing (240 milliliters)
Instructions
- Wash and dry the zucchinis.
- Slice the zucchinis into 1/4-inch thick rounds.
- In a shallow bowl, combine the flour, garlic powder, onion powder, salt, and black pepper.
- In another bowl, beat the eggs.
- In a third bowl, mix the breadcrumbs with the grated Parmesan cheese.
- Dip each zucchini slice into the flour mixture, coating both sides.
- Dip the floured zucchini into the beaten eggs, ensuring it’s fully covered.
- Press the zucchini slice into the breadcrumb mixture, coating all sides.
- Place the coated slices on a plate and repeat with remaining zucchini slices.
- Heat vegetable oil in a large skillet over medium heat.
- Fry the zucchini slices in batches, about 3-4 minutes per side, until golden brown.
- Remove the fried zucchini and drain on paper towels.
- Serve the fried zucchini warm with ranch dressing for dipping.
