Ingredients

  • 1 cup (240 ml) all-purpose flour (120 grams)
  • 2 large eggs
  • 1 cup (240 ml) breadcrumbs (100 grams)
  • 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 2 medium zucchinis
  • Vegetable oil for frying
  • 1 cup (240 ml) ranch dressing (240 milliliters)


Instructions

  1. Wash and dry the zucchinis.
  2. Slice the zucchinis into 1/4-inch thick rounds.
  3. In a shallow bowl, combine the flour, garlic powder, onion powder, salt, and black pepper.
  4. In another bowl, beat the eggs.
  5. In a third bowl, mix the breadcrumbs with the grated Parmesan cheese.
  6. Dip each zucchini slice into the flour mixture, coating both sides.
  7. Dip the floured zucchini into the beaten eggs, ensuring it’s fully covered.
  8. Press the zucchini slice into the breadcrumb mixture, coating all sides.
  9. Place the coated slices on a plate and repeat with remaining zucchini slices.
  10. Heat vegetable oil in a large skillet over medium heat.
  11. Fry the zucchini slices in batches, about 3-4 minutes per side, until golden brown.
  12. Remove the fried zucchini and drain on paper towels.
  13. Serve the fried zucchini warm with ranch dressing for dipping.
