A delightful quick bread made with fresh strawberries, perfect for breakfast or as a snack.
Ingredients
- 2 cups fresh strawberries, diced
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh strawberry juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and buttermilk until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually incorporate the dry mix into the wet ingredients until just combined. Be careful not to overmix.
- Gently fold in the diced strawberries.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack.
- For the glaze, whisk together the powdered sugar and fresh strawberry juice until smooth, and drizzle over the cooled loaf.
Notes
Choose ripe, fragrant strawberries for the best flavor. You can use frozen strawberries if fresh ones are unavailable, but ensure they are thawed and drained.
