Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon ground cumin (5 g)
- 1 teaspoon smoked paprika (5 g)
- Salt, to taste
- Black pepper, to taste
- 4 cups chopped romaine lettuce (about 200 g)
- 1 cup cherry tomatoes, halved (150 g)
- 1 medium cucumber, diced (about 150 g)
- 1 red bell pepper, diced (about 150 g)
- 1/4 cup red onion, thinly sliced (40 g)
- 1 avocado, peeled and pitted
- 2 tablespoon s lime juice (30 ml)
- 1/4 cup fresh cilantro leaves, chopped (15 g)
- 1/2 cup canned black beans, drained and rinsed (120 g)
- 1/2 cup corn kernels, cooked (120 g)
- 1/2 cup shredded cheddar cheese (50 g)
- 1/4 cup sour cream (60 ml)
- 1 tablespoon fresh lime zest (15 g)
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix olive oil, ground cumin, smoked paprika, salt, and black pepper.
- Coat the chicken breasts with the spice mixture on all sides.
- Place the chicken on the grill and cook for 6-7 minutes on each side, or until fully cooked.
- Remove chicken from grill and let it rest for 5 minutes before slicing.
- In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, red bell pepper, and red onion.
- In another bowl, mash the avocado and mix with lime juice and salt to taste.
- Add the cilantro to the avocado mixture and stir to combine.
- Add the black beans and corn to the salad mixture.
- Slice the grilled chicken into strips and add to the salad.
- Top the salad with shredded cheddar cheese.
- Add dollops of the guacamole to the salad.
- Drizzle sour cream over the salad.
- Sprinkle fresh lime zest on top of the salad.
- Toss gently to combine all ingredients before serving.
