Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • Salt, to taste
  • Black pepper, to taste
  • 4 cups chopped romaine lettuce (about 200 g)
  • 1 cup cherry tomatoes, halved (150 g)
  • 1 medium cucumber, diced (about 150 g)
  • 1 red bell pepper, diced (about 150 g)
  • 1/4 cup red onion, thinly sliced (40 g)
  • 1 avocado, peeled and pitted
  • 2 tablespoon s lime juice (30 ml)
  • 1/4 cup fresh cilantro leaves, chopped (15 g)
  • 1/2 cup canned black beans, drained and rinsed (120 g)
  • 1/2 cup corn kernels, cooked (120 g)
  • 1/2 cup shredded cheddar cheese (50 g)
  • 1/4 cup sour cream (60 ml)
  • 1 tablespoon fresh lime zest (15 g)


Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix olive oil, ground cumin, smoked paprika, salt, and black pepper.
  3. Coat the chicken breasts with the spice mixture on all sides.
  4. Place the chicken on the grill and cook for 6-7 minutes on each side, or until fully cooked.
  5. Remove chicken from grill and let it rest for 5 minutes before slicing.
  6. In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, red bell pepper, and red onion.
  7. In another bowl, mash the avocado and mix with lime juice and salt to taste.
  8. Add the cilantro to the avocado mixture and stir to combine.
  9. Add the black beans and corn to the salad mixture.
  10. Slice the grilled chicken into strips and add to the salad.
  11. Top the salad with shredded cheddar cheese.
  12. Add dollops of the guacamole to the salad.
  13. Drizzle sour cream over the salad.
  14. Sprinkle fresh lime zest on top of the salad.
  15. Toss gently to combine all ingredients before serving.
