A comforting and hearty dish that transforms classic French onion soup into a flavorful rice dish with caramelized onions and melted Gruyère cheese.
Ingredients
- 1 cup long-grain rice
- 4 cups beef broth
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- Fresh parsley for garnish
Instructions
- In a large pot, melt butter and olive oil over medium heat.
- Add the thinly sliced onions and sugar. Stir occasionally until the onions caramelize, taking about 15-20 minutes.
- Stir in the long-grain rice and mix for 2 minutes, allowing the rice to absorb the onion flavor.
- Pour in the beef broth, season with salt and pepper, then bring everything to a boil.
- Reduce the heat to low, cover the pot, and simmer for 18-20 minutes until the rice is tender and the liquid absorbs.
- Remove from heat, stir in half the Gruyère cheese until melted.
- Serve hot, topped with the remaining cheese, and garnish with fresh parsley.
Notes
For richer flavor, use homemade beef broth. Adjust seasoning to personal taste, and feel free to experiment with different types of cheese.
