Description

A classic comfort dish featuring tender beef, caramelized onions, and hearty egg noodles in a savory broth, topped with cheese.


Ingredients

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 2 large onions, thinly sliced
  • 3 cups low-sodium beef broth
  • 3 cups egg noodles
  • 2 tablespoons olive oil
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional for topping)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced onions and a pinch of salt.
  3. Cook slowly, stirring frequently, until the onions turn a deep, golden brown (approximately 15-20 minutes).
  4. Once caramelized, add the beef stew meat to the pot and brown on all sides.
  5. Stir in Worcestershire sauce and dried thyme, then add beef broth.
  6. Bring to a simmer and cook for about 60 minutes until the beef is tender.
  7. Cook egg noodles according to package instructions, then drain.
  8. When the beef is tender, season with salt and pepper.
  9. Combine the noodles with the beef and onion mixture.
  10. If desired, sprinkle shredded cheese on top before serving.

Notes

Best served with a side salad or crusty bread. Leftovers can be stored in the fridge for up to three days.
