Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Additional butter for greasing the griddle
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the egg and combine it with the milk and melted butter.
- Pour the wet ingredients into the dry mix and stir gently until just combined.
- Allow the batter to rest for five minutes.
- Preheat and lightly grease the griddle with butter over medium heat.
- Pour 1/4 cup of batter for each pancake onto the griddle.
- Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
Notes
For extra fluffiness, consider separating the egg and beating the egg white until stiff peaks form before folding it into the batter.
