Description

Delightful cupcakes that mimic the airy texture of a classic Japanese cheesecake, perfect for sharing with loved ones.


Ingredients

  • 8 oz Cream Cheese
  • 1 cup Sugar
  • 1/2 cup Milk
  • 1/4 cup Unsalted Butter
  • 6 large Egg Yolks
  • 6 large Egg Whites
  • 3/4 cup All-Purpose Flour
  • 1/4 teaspoon Salt
  • 1/4 cup Cocoa Powder (optional)
  • 1 cup Mashed Bananas or Applesauce
  • 1/2 cup Chopped Nuts (optional)
  • 1/4 teaspoon Cayenne Pepper (optional)


Instructions

  1. Allow cream cheese and butter to reach room temperature.
  2. Beat cream cheese and butter until smooth; gradually add sugar until light and fluffy.
  3. Whisk in egg yolks and milk until blended.
  4. Sift in flour, salt, and cocoa powder; stir until just combined.
  5. Whip egg whites to soft peaks and gently fold into the mixture.
  6. Add mashed bananas or applesauce and nuts, folding gently.
  7. Fill cupcake molds about 2/3 full with batter.
  8. Bake at 320°F for 20-25 minutes until a toothpick comes out clean.
  9. Allow to cool before removing from molds.

Notes

Using overripe bananas enhances flavor. Experiment with optional ingredients for variety.
