Ingredients
- 8 oz Cream Cheese
- 1 cup Sugar
- 1/2 cup Milk
- 1/4 cup Unsalted Butter
- 6 large Egg Yolks
- 6 large Egg Whites
- 3/4 cup All-Purpose Flour
- 1/4 teaspoon Salt
- 1/4 cup Cocoa Powder (optional)
- 1 cup Mashed Bananas or Applesauce
- 1/2 cup Chopped Nuts (optional)
- 1/4 teaspoon Cayenne Pepper (optional)
Instructions
- Allow cream cheese and butter to reach room temperature.
- Beat cream cheese and butter until smooth; gradually add sugar until light and fluffy.
- Whisk in egg yolks and milk until blended.
- Sift in flour, salt, and cocoa powder; stir until just combined.
- Whip egg whites to soft peaks and gently fold into the mixture.
- Add mashed bananas or applesauce and nuts, folding gently.
- Fill cupcake molds about 2/3 full with batter.
- Bake at 320°F for 20-25 minutes until a toothpick comes out clean.
- Allow to cool before removing from molds.
Notes
Using overripe bananas enhances flavor. Experiment with optional ingredients for variety.
