  • 1/2 teaspoon (3 ml) black pepper (1 gram)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice (15 ml)
  • 1/4 cup (60 ml) grated cheddar cheese (25 grams)
  • 1 tablespoon (15 ml) chopped fresh parsley (4 grams)


Instructions

  1. Wash the asparagus, zucchini, and yellow squash thoroughly under cold water.
  2. Trim the tough ends from the asparagus and cut into 2-inch pieces.
  3. Slice the zucchini and yellow squash into thin rounds.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  6. Add the asparagus, zucchini, and yellow squash to the skillet.
  7. Season the vegetables with salt and black pepper.
  8. Stir the vegetables occasionally, cooking for about 8-10 minutes until tender.
  9. Drizzle the lemon juice over the cooked vegetables.
  10. Sprinkle the grated Parmesan cheese over the vegetables and stir to combine.
