Description

A comforting enchirito recipe filled with seasoned beef, creamy refried beans, and topped with melted cheese, bringing back cherished family memories.


Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 packet taco seasoning (or 2 tbsp homemade mix)
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 6 large flour tortillas (burrito size)
  • 2 cups shredded cheese (Monterey Jack and cheddar blend)
  • 1/2 cup diced white onions
  • 1/4 cup chopped fresh cilantro


Instructions

  1. Start by browning the ground beef in a skillet over medium heat. Break it up until there’s no pink remaining, which takes about 5-7 minutes.
  2. Drain excess grease, leaving a teaspoon in the pan for added flavor. Stir in your taco seasoning along with ¾ cup of water and let it bubble for about 5 minutes until thickened.
  3. In a separate pan, warm up the refried beans until nice and creamy.
  4. Take each tortilla and spread about 2 tablespoons of beans down the center. Then layer the seasoned beef on top and sprinkle with cheese, reserving most for later.
  5. Roll each tortilla snugly, tucking in the sides to create a neat package. Place them seam-side down in a baking dish.
  6. Pour the enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 20 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let rest for 5 minutes. Top with fresh diced onions and chopped cilantro before serving.

Notes

For an extra crispy top, broil the enchiritos for an additional 2-3 minutes after baking. Squeeze lime juice over the top just before serving for added freshness.
