Ingredients

  • 2 medium eggplants, about 2 pounds (900g)
  • 3/4 teaspoon (4 ml) fine sea salt
  • 3 tablespoons (45 ml) vegetable oil, plus more for serving
  • 2 to 3 medium tomatoes, sliced
  • 8 ounces (227 g) fresh mozzarella, sliced
  • Handful of fresh basil leaves
  • Fruit vinegar for serving
  • Flaky sea salt for serving


Instructions

  1. Trim the tops off the eggplants and cut them into rounds that are one inch thick. Lightly sprinkle them with fine sea salt and let them sit for 5 to 10 minutes.
  2. Coat all sides of the eggplant slices with vegetable oil using a brush.
  3. Place a grill pan on medium heat (or prepare your outdoor grill to medium). Lay the eggplant rounds in a single layer on the grill pan. Cook each side for approximately 5 minutes or until they are soft and show grill marks.
  4. As the eggplants are grilling, cut the tomatoes and mozzarella into slices that are half an inch thick. Lightly season the tomato slices with fine sea salt.
  5. Construct the Napoleons by stacking grilled eggplant, salted tomato slices, mozzarella, and fresh basil leaves.
  6. Pour fruit vinegar and a little extra vegetable oil over the layered vegetables. Complete with a sprinkle of flaky sea salt, and savor your creation!
