Ingredients
- 2 medium eggplants, about 2 pounds (900g)
- 3/4 teaspoon (4 ml) fine sea salt
- 3 tablespoons (45 ml) vegetable oil, plus more for serving
- 2 to 3 medium tomatoes, sliced
- 8 ounces (227 g) fresh mozzarella, sliced
- Handful of fresh basil leaves
- Fruit vinegar for serving
- Flaky sea salt for serving
Instructions
- Trim the tops off the eggplants and cut them into rounds that are one inch thick. Lightly sprinkle them with fine sea salt and let them sit for 5 to 10 minutes.
- Coat all sides of the eggplant slices with vegetable oil using a brush.
- Place a grill pan on medium heat (or prepare your outdoor grill to medium). Lay the eggplant rounds in a single layer on the grill pan. Cook each side for approximately 5 minutes or until they are soft and show grill marks.
- As the eggplants are grilling, cut the tomatoes and mozzarella into slices that are half an inch thick. Lightly season the tomato slices with fine sea salt.
- Construct the Napoleons by stacking grilled eggplant, salted tomato slices, mozzarella, and fresh basil leaves.
- Pour fruit vinegar and a little extra vegetable oil over the layered vegetables. Complete with a sprinkle of flaky sea salt, and savor your creation!
