A delightful, egg-free version of the classic French toast made with thick slices of bread, milk, and cornstarch for a light and crispy texture.
Ingredients
- 2 cups milk
- 6 tablespoons cornstarch
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2-3 tablespoons butter
- 6-10 slices of thick-sliced bread
Instructions
- In a large, flat-bottomed bowl, whisk together the cornstarch, sugar, cinnamon, and 1 cup of milk until the cornstarch dissolves.
- Stir in the remaining milk and vanilla extract to form the egg-free batter.
- Melt 1 to 2 tablespoons of butter in a skillet or on a griddle over medium heat.
- Dip each slice of bread quickly into the batter, coating both sides without soaking too long, and place in the skillet.
- Cook each slice for 2 to 3 minutes on one side until golden brown; then flip and cook for another 2 to 4 minutes until both sides are golden.
- Re-butter the skillet as needed and repeat until all bread slices are cooked.
- Serve warm with maple syrup and toppings of your choice like berries or whipped cream.
Notes
Use high-quality, thick-sliced bread for better flavor. Experiment with spices like nutmeg or almond extract.
