Ingredients

  • 1 cup (240 ml) shredded zucchini, drained well
  • 1 clove garlic, grated fine
  • 1/3 cup (80 ml) breadcrumbs
  • 1/4 cup (60 g) grated alternative cheese
  • 1 large egg
  • 2 tablespoons (30 ml) chopped fresh chives (or 1 tablespoon dried chives)
  • 1 tablespoon (15 ml) chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon (5 ml) chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon (5 ml) chopped fresh oregano (or 1/2 teaspoon dried)
  • pinch of salt and pepper
  • alternative tomato sauce for dipping


Instructions

  1. Warm up your oven to 400°F and prepare a baking tray by spraying it lightly with non-stick spray or brushing it with olive oil.
  2. Using a box grater, shred the zucchini onto a clean cloth, then roll it up and squeeze tightly to remove excess water.
  3. Finely grate the garlic using the small holes on the grater.
  4. In a medium-sized bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, alternative cheese, chives, parsley, basil, oregano, and a pinch of salt and pepper. Stir until everything is evenly mixed.
  5. Take a tablespoon of the mixture, shape it into a small ball with your hands, and arrange it on the prepared baking tray.
  6. Place the tray in the preheated oven and bake for 15-18 minutes, or until the bites turn golden brown. Enjoy them warm, accompanied by alternative tomato sauce for dipping. This recipe yields approximately 16 bites.
