Description

A vibrant and flavorful dish featuring rice noodles and colorful vegetables, perfect for quick, satisfying meals.


Ingredients

  • 8 oz rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1/4 teaspoon red pepper flakes
  • Fresh cilantro for garnish
  • Chopped peanuts for garnish


Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the sliced bell peppers, carrots, and broccoli to the pan. Stir-fry for about 5-7 minutes, or until the vegetables are tender.
  4. Mix together soy sauce, lime juice, brown sugar, and red pepper flakes in a small bowl.
  5. Add the cooked noodles to the vegetable mixture and pour the sauce over the top. Toss everything together until combined and heated through.
  6. Serve immediately, garnished with fresh cilantro and chopped peanuts.

Notes

Adjust spice levels to preference by modifying the amount of red pepper flakes. Store leftovers in an airtight container in the refrigerator for 3-4 days.
