Ingredients

  • 2 tablespoon (30 ml) s unsalted butter
  • 3 garlic cloves minced
  • 1/4 teaspoon (1 ml) crushed red pepper
  • 2 pounds (907 g) large shrimp shelled and deveined
  • 1 teaspoon (5 ml) paprika
  • 3/4 teaspoon (4 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 cup (120 ml) low-sodium vegetable broth
  • 1 lemon juiced
  • 2 tablespoon (30 ml) s red vinegar
  • 3 zucchinis spiralized
  • grated Parmesan cheese for serving


Instructions

  1. In a large skillet, melt the butter, then incorporate the garlic and crushed red pepper, cooking until you notice a fragrant aroma, approximately 1 minute.
  2. Introduce the shrimp to the skillet and sprinkle with paprika, salt, and pepper. Sauté until the shrimp turns pink, which should take about 3-4 minutes based on their size. Remove with a slotted spoon and place them on a covered plate.
  3. Pour the vegetable broth, lemon juice, and red vinegar into the skillet, scraping the sides, and allow the mixture to come to a boil.
  4. Turn off the heat, add the spiralized zucchini and shrimp back into the skillet, and gently toss everything together to let the sauce warm through.
  5. Serve right away, garnishing with Parmesan cheese if you wish.
