Ingredients
- 2 tablespoon (30 ml) s unsalted butter
- 3 garlic cloves minced
- 1/4 teaspoon (1 ml) crushed red pepper
- 2 pounds (907 g) large shrimp shelled and deveined
- 1 teaspoon (5 ml) paprika
- 3/4 teaspoon (4 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1/2 cup (120 ml) low-sodium vegetable broth
- 1 lemon juiced
- 2 tablespoon (30 ml) s red vinegar
- 3 zucchinis spiralized
- grated Parmesan cheese for serving
Instructions
- In a large skillet, melt the butter, then incorporate the garlic and crushed red pepper, cooking until you notice a fragrant aroma, approximately 1 minute.
- Introduce the shrimp to the skillet and sprinkle with paprika, salt, and pepper. Sauté until the shrimp turns pink, which should take about 3-4 minutes based on their size. Remove with a slotted spoon and place them on a covered plate.
- Pour the vegetable broth, lemon juice, and red vinegar into the skillet, scraping the sides, and allow the mixture to come to a boil.
- Turn off the heat, add the spiralized zucchini and shrimp back into the skillet, and gently toss everything together to let the sauce warm through.
- Serve right away, garnishing with Parmesan cheese if you wish.
