Ingredients
- 4 medium yellow squash (600 g)
- 3 tablespoons olive oil (45 ml)
- 1/4 cup garlic powder (60 g)
- 1/2 cup grated cheese (120 g)
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) pepper
- 1 teaspoon (5 ml) chili flakes, optional
- Fresh thyme or parsley to garnish, optional
Instructions
- Begin by setting your oven to 400°F and positioning the rack in the center.
- Slice the yellow squash into “triangle” pieces by cutting at a 45-degree angle one way and then the opposite. Alternatively, you could cut them into half-inch circles. Remove the ends and arrange the squash in an ungreased 9×13-inch baking pan, as oil will be added next.
- Pour olive oil over the squash. Next, evenly distribute the garlic powder, cheese, salt, pepper, and chili flakes (if using) over the squash. Use your hands or a big spoon to mix everything so that the squash pieces are well-coated.
- Put the dish in the oven to roast for about 10 to 12 minutes, until they begin to soften. Afterward, switch the oven to broil on HIGH for 3 to 5 minutes. Keep an eye on them to avoid burning, as times may vary by oven.
- Once the squash is a golden brown and slightly crispy, take them out of the oven. If you like, add some fresh thyme or parsley for garnish. Serve right away and enjoy!
