Ingredients

  • 4 medium yellow squash (600 g)
  • 3 tablespoons olive oil (45 ml)
  • 1/4 cup garlic powder (60 g)
  • 1/2 cup grated cheese (120 g)
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) pepper
  • 1 teaspoon (5 ml) chili flakes, optional
  • Fresh thyme or parsley to garnish, optional


Instructions

  1. Begin by setting your oven to 400°F and positioning the rack in the center.
  2. Slice the yellow squash into “triangle” pieces by cutting at a 45-degree angle one way and then the opposite. Alternatively, you could cut them into half-inch circles. Remove the ends and arrange the squash in an ungreased 9×13-inch baking pan, as oil will be added next.
  3. Pour olive oil over the squash. Next, evenly distribute the garlic powder, cheese, salt, pepper, and chili flakes (if using) over the squash. Use your hands or a big spoon to mix everything so that the squash pieces are well-coated.
  4. Put the dish in the oven to roast for about 10 to 12 minutes, until they begin to soften. Afterward, switch the oven to broil on HIGH for 3 to 5 minutes. Keep an eye on them to avoid burning, as times may vary by oven.
  5. Once the squash is a golden brown and slightly crispy, take them out of the oven. If you like, add some fresh thyme or parsley for garnish. Serve right away and enjoy!
